Are you a coffee drinker? A friend shared this with me and I thought I’d share it with you. I’m not totally convinced, but am curious to hear what you think.

Recipe of the Day: Decadent SANE Whipped Ice Coffee
Ingredients
•
2 tbsp Instant Coffee of your choice (yep you can even use Decaf!)
•
2 tbsp boiling water
•
2 tbsp erythritol (of your choice of alternative sweeteners)
•
1 cup Almond milk (or coconut milk)
Directions
1. In a small saucepan, bring about a half cup of water to boil (enough that you can scoop 2 tbsps out). While you are boiling your water, prepare your glass.
2. Add a little ice and pour your milk of choice in. Make sure you leave room for the whipped coffee. Once the water is boiling, mix 2tbsp boiling water, 2 tbsp Instant Coffee and 2 tbsp erythritol in a bowl. Use a hand mixer or frother and mix until it forms stiff peaks.
3. Scoop it up and place it on top of your milk.
4. Grab a straw and enjoy!
Tip: These are great with sugar free coffee syrups and drizzles. 😉
