I knew a follow up to the first Seelbach’s Private Reserve Amburana was going to be tough. To me, Amburana is a hard finish to find balance. It’s easily overdone. But, with the right amount of restraint it can amplify a whiskey. For this blend we started with two 6+ year old Kentucky Bourbon barrels. The blend needed to be light in spice to make sure these notes weren’t overdone in the finished product. We found a blend that was heavy in toffee and buttery notes. It had some sweetness but overall reminded me of a savory croissant or pastry. The affects of Amburana were immediate! After 24-hours notes of cinnamon and spice were apparent on the nose. At five days we were left with a wonderfully spiced nose with a balanced and subtle spice.

Mash Bill: 78/10/12 Corn/Malted Barley

Proof: 115.5 Proof; Barrel Strength

Bottle Count: 396 bottles

Tasting Notes: Cinnamon butter, French toast, powdered sugar, maple syrup and whipped chocolate ganache. The palate is full on cinnamon butter. There’s a big spicy notes without the lingering heat and pastry notes from the nose. This is a finessed Amburana finish.

A Note About Batch Numbers

As the Seelbach’s Private Reserve continues to grow we’ve revamped how we use batch numbers. Each core release will now have it’s own sequential numbers. This replaces our old system of each release getting the next batch number. I.e. even though Cab Finished is our seventh release, it’s Batch #001 because it’s the first cab finished bourbon. This may be a little confusing in our first few releases. In the future, it should help Seelbach’s customers track each release a little easier. But, if you have any questions about a specific batch please feel free to reach out!
