Some things just take time. As with this 10 to 13-year bourbon, the story took time as well. I first met Ed Bley in late 2017. We were at a tasting (pic below) in Northern Kentucky and he poured me some of his “Old Baldy” bourbon. This 300 bottle release had already generated quite a bit of buzz online. After tasting the bourbon that night I named it one of my favorite bottles of 2017 on the Bourbonr Blog! But, that was six years ago! And almost five years since Bley announced he was starting his own Independent Bottling company Rising Tide Spirits. While I’m usually a “ready, fire, aim” I’m glad others have the patience for something great. The “Old Stubborn” name pays homage to this patience. And I’m excited to say, the wait paid off! Tasting Notes: Deep, rich dried fruit and spice. Loads of dates, fresh cracked pepper, caramel corn and dried oak. Incredibly long finish.
