Recipe of the Day: Mini Chocolate Chip Muffins

Ingredients

1 cup Almond Flour
1 teaspoon Baking Powder
1/2 cup Xylitol or Erythritol (Optional)
1/4 teaspoon Salt
10 tablespoons Coconut Cream
2 tablespoons Unsalted Butter
1 fl ounce Tap Water
2 teaspoons Vanilla Extract
4 ounces Sugar Free Chocolate Chips

Directions

Heat oven to 350°F. Grease two 12-compartment mini muffin pans.
In a bowl, combine almond flour, baking powder, xylitol or erythritol, and salt.
In another bowl, whisk coconut cream, butter, water and vanilla to combine.
Add the coconut cream mixture to the almond flour mixture. Stir until well combined. Fold in chocolate chips.
Divide batter (it will be somewhat thick) in pan compartments, using about 1 rounded tablespoon per muffin.
Bake 15-20 minutes, or until lightly browned on top and toothpick inserted in center comes out clean.
Cool muffins in pans for 2 minutes, then turn out onto wire racks to cool completely.

Remember the Good Ol’ Days When Wood Was Wood?

I am fond of wood, glass, wool, brass, and other natural materials. There is something so luxurious and honest about them in a world drowning in plastic.

Not that plastic doesn’t serve its uses. It’s cheap, easy to work with, and plentiful. We can use plastic to make everything from blankets to baking sheets. Its versatility has been enhanced with thousands of chemicals to give it attributes like flexibility, heat resistance, and structural integrity.

Unfortunately, plastic has become a plague of sorts. Among other things, it exposes us to chemicals that interfere with our hormones.

A study published in Environmental Science & Technology earlier this year found even our plastic food packaging has hormone-disrupting chemicals and puts us at risk of developmental and reproductive issues, not to mention hormone-related cancers. Coincidentally, two hormone-related cancers, breast cancer and prostate cancer, are the most prevalent cancers for women and men respectively.

Another issue is that plastic breaks down into particles small enough to be inhaled and ingested without our awareness. That means even plastic that has never touched our food or water can end up in our bodies.

According to a study published in the New England Journal of Medicine, microplastics were found in the blocked arteries of over half the people in a study published in March (150 out of 304 people).

These people were 4.5 times more likely to have a heart attack, stroke, or die in the following three years that researchers monitored them.

And the above problems are becoming more severe due to the rapidly rising volume of plastic in the world today. Australian researchers estimate that many people could be eating the equivalent of a credit card in plastic each week.

Global plastic production has more than doubled in the last twenty years, according to two data sets collated by Our World in Data. It’s so common that avoiding it can be tricky. My wife and I do our best though.

We often buy things second-hand to get higher-quality items at a cheaper price, whether that be winter clothing or real-wood flooring. If we need something, I set a reminder on our local buy and sell website to alert me if something comes up. I can include the materials I prefer: brass lamp, teak table, leather chair.

There is something of the time held in these better-made goods. Something authentic. They do more than hold their value, they hold something of the people of their era. People had fewer things back then, but better things. I cringe at the thought that people will buy particle board furniture with a plastic coating to make it look like wood while solid oak bedroom sets go to the dump because they are “dated.”

The benefits of our plastic floors (vinyl), blankets (microfiber), and cookware coatings (Teflon) are that they are convenient and cheap to buy, but they cost us as well.

As the things we cook with, sit on, wear, and fill our homes with become cheaper, and more disposable and unnatural, I worry we lose touch with the very idea of enduring quality and authenticity.

Here are just some of the events on this date in the past.

•	On this day in 1930: Respecting demands from Black people, the New York Times announced that the “N” in the word “Negro” would be capitalized in its stories.
•	In 1942: The U.S. defeated Japanese forces to end the five-day Battle of Midway in the Pacific Theater during World War II. More than 300 U.S. sailors, airmen and Marines, as well as about 3,000 Japanese service members, died in the battle. Midway Atoll is an unincorporated island of the Hawaiian Archipelago that is about 1,300 miles northwest of Honolulu.
•	In 1969: “The Johnny Cash Show” premiered on television live from the historic Ryman Auditorium in Nashville, Tennessee. Cash had met his future wife, June Carter, backstage at the Ryman on the night of his 1956 Grand Ole Opry debut.
•	In 1975: Sony unveiled Betamax, the first home videocassette recorder, or VCR, format to capture video from a television. The format later saw competition from JVC, which launched the longer-playing video home system, or VHS, in 1976. VHS ultimately became the industry standard. Sony discontinued making Betamax players in 2002, but it continued making tapes into 2016.
•	In 1979: Texas became the first state to recognize Juneteenth, which celebrates the full enforcement of the Emancipation Proclamation when U.S. troops took control of the last Confederate state. On June 19, 1865, Union Army Gen. Gordon Granger formally delivered the news to slaves in Texas that President Abraham Lincoln had freed all slaves over two years prior. The news had previously been withheld from enslaved people in Texas. Juneteenth is also known as Freedom Day or Emancipation Day.
•	In 1982: Priscilla Presley publicly opened her husband Elvis’ mansion, Graceland, in Memphis, Tennessee. By 2022, Graceland had over 22 million fans tour the house, which sits on nearly 14 acres.

1913 First Successful Ascent of Denali

The first drive-in movie theater opened on June 6, 1933, in Camden, New Jersey. This novel concept, introduced by Richard Hollingshead, was designed to offer a unique movie-watching experience where patrons could view films from the comfort and privacy of their cars. The idea quickly caught on, becoming a popular family activity and a quintessential part of American culture, especially during the 1950s and 1960s. Drive-ins became synonymous with American pop culture, providing a space for community and entertainment under the stars.

1939 Historic U.S. Visit by King George VI

King George VI, accompanied by Queen Elizabeth, became the first reigning British monarch to visit the United States on June 7, 1939. This visit was significant both diplomatically and symbolically, coming at a time of increasing tensions in Europe prior to World War II. The royal tour was part of an effort to bolster Anglo-American relations and featured a celebrated visit to the 1939 New York World’s Fair. The warmth and reception the royal couple received helped strengthen the transatlantic alliance that would prove crucial during the forthcoming global conflict.

1962 Switzerland Opens First Drive-Through Bank

On June 7, 1962, Switzerland introduced its first drive-through bank, a novel concept that provided motorists with the convenience of conducting banking transactions without leaving their cars. This innovation reflected a broader trend towards customer-centric services and efficiency in the banking industry. The drive-through bank model soon spread globally, becoming a standard feature in many countries and symbolizing the increasing pace of life and the demand for more accessible financial services.
