| BACKGROUND:Taub Family Vineyards is the result of a multi-generational legacy in fine wine. Led by proprietor Marc Taub, whose family’s journey in the wine business began nearly a century ago, the estate is dedicated to exploring Napa’s most dynamic sub-appellations and single vineyards. This Cabernet Sauvignon is a pure expression of Rutherford, one of Napa’s most preeminent sites, renowned for its classic terroirs. Sourced from vineyards on the west side of Highway 29, this wine benefits from gravel-rich, volcanic alluvial soils that define the famous “Rutherford dust”. The family’s commitment to quality is unwavering, as they also have access to some of Napa’s most hallowed soils, including those of the Beckstoffer Vineyards.The 2019 vintage was a year of ideal growing conditions and exceptional grape quality, resulting in wines of outstanding depth and complexity. The winemaking process is a meticulous, hands-on approach led by winemaker Maayan Koschitzky. Grapes are hand-harvested, hand-sorted, and destemmed, followed by a cold soak of 3-5 days. Fermentation lasts for approximately 14 days with three daily pump-overs, with an additional extended maceration of 7-14 days to optimize flavor, mouthfeel, and tannin structure. The wine is then aged for 22 months in 80% new French oak, a regimen that adds complexity and elegance while respecting the wine’s character.The 2019 Taub Family Vineyards Cabernet Sauvignon has a deep garnet-purple color with a beguiling bouquet of dark plum and blackberries combined with savory hints of tobacco, anise, and herbs de Provence. The palate is full-bodied, broad, and plush with tremendous structure and intensity, displaying a palate full of blueberries, black and red currants, licorice, baker’s chocolate, coffee beans, and quintessential “Rutherford dust”. This is a generous and tense wine, with a bright, lingering finish that is lifted by a nervy energy and vibrant acidity. |
