Seelbach’s is dedicated to ‘unlocking craft spirits.’ As a bespoke independent bottler we embrace patience, waiting for that special whiskey to cross our path. While we typically explore the wild side of finishes, that’s not always the case – and precisely what occurred with this 9 year 5 month Kentucky Straight Bourbon. When we tasted this at barrel strength we knew it was something special, so this bottle remains uncut and unfinished allowing the high-rye bourbon mash bill to highlight the elegance that comes with aged whiskey. We’ve released this bottle as an example of what makes Seelbach’s special, and just one more example of how we unlock great spirits for the curious drinker. We hope you enjoy.
Tasting Notes: This is the first bottle I suggest to open for 30 minutes before pouring. The high proof takes a little longer to settle. The nose is candied ginger and orange marmalade. The palate opens with gingerbread cookies, caramel and stewed apples. It’s rich and sweet. The palate is viscous and drinks much lower than it’s stated 131 proof. On the finish there’s a flash of nutmeg, tangerine and toasted oak. Dried spices linger on this long finish.
