Calabacitas with Hatch Chiles

Hello, Hatch Chile Family!

Very few things say New Mexico like Hatch Green Chile, and this traditional New Mexico side dish is delicious! It would be the perfect light summer meal on a meatless Monday. If you prefer a meaty meal, I can see this paired with a juicy steak or even grilled shrimp!

Ingredients:

6 or 7 yellow squash, sliced thin
olive oil
5 Hatch Green Chile, roasted peeled, and chopped; or 1 cup Roasted Hatch Green Chile, chopped; or 1 cup Hatch Green Chile Roast
1 medium white onion, diced
1 lb. white corn kernels
2 t. dried Mexican oregano
1 t. ground cumin
salt and pepper
