I knew a follow up to the first Seelbach’s Private Reserve Amburana was going to be tough. To me, Amburana is a hard finish to find balance. It’s easily overdone. But, with the right amount of restraint it can amplify a whiskey. For this blend we started with two 6+ year old Kentucky Bourbon barrels. The blend needed to be light in spice to make sure these notes weren’t overdone in the finished product. We found a blend that was heavy in toffee and buttery notes. It had some sweetness but overall reminded me of a savory croissant or pastry. The affects of Amburana were immediate! After 24-hours notes of cinnamon and spice were apparent on the nose. At five days we were left with a wonderfully spiced nose with a balanced and subtle spice.
