Mashed Potato Topping

• 3-4 medium russet potatoes
•  2 tbsp clarified butter or ghee
• 1 cup almond milk
• 1 tsp salt ½ tsp black pepper

Ground Beef Filling

•  1 lb ground beef
•  ¼ diced white onion
•  2 diced garlic cloves
•  2 diced carrots
•  1 tsp salt (or to taste)
•  ½ tsp black pepper (or to taste)
•  ¼ tsp ground cumin
•  3-4 Hatch Green Chile, roasted and chopped;1 cup Roasted Hatch Green Chile, chopped; or 1 cup Hatch Chile Roast.
•  1 diced jalapeño (optional)
